WAGYU BEEF

Wagyu cattle originate from Japan. The word wagyu (pronounced way-gyu) means Japanese cattle.

It is a breed uniquely marbled, being renowned for its flavour, tenderness and juiciness.

The wagyu cattle we select to use in our store only come from the most prestigious Australian wagyu breeders that have a strong wagyu genetic pool in Australia. With great feeding rations and animal welfare, our suppliers can achieve large results for maximum marbling and enhanced flavour.

OUR GOURMET SAUSAGES

All of our gourmet sausages are made from free range meats. The meats are encased in a natural skin and are all handcrafted in store by our skilled butchers. This way you know that our sausages will be perfect every time!

We only choose the best garden fresh herbs and spices to blend with our meats and any cheese we use is from our in store deli.

OUR DRY AGE ROOM

Our one of a kind purpose built dry  aging room is an area where the temperature of the room can be controlled to allow for minimum bad bacterial growth, where the humidity is approximately set at 75 to 80%, and the air temperature is 0 to 1 degree.

This allows for a slow aging process which usually results in a crust being formed on the exterior of the meat which then naturally causes the enzymes in the meat to break down the muscle fibres. This aging process enhances the tenderness of the meat and allows for a rare and unique flavour to come out in the meat.

CRAFT PASTRY AND PIES

All of our craft pastry products and pies are cooked in store. The filling is naturally thickened by reducing and rendering down fats in the meats. There are no artificial colours or flavours, thickening agents or gels added.

We hand-cut all our meats added into our products. Only the best ingredients are sourced and added to our pies and pastries, and that's why they taste so good!

AUTHENTIC SMALLGOODS

Saloumi is our main featured small goods supplier, as the owners are unique people that share a food vision as we do.

Saloumi consistently craft fermented meats — commonly referred to as small goods, beneath the green hills of Byron Bay Hinterland.

In crafting the award winning salami range, the opportunity to expand the range arose, now Saloumi have a massive range of cured products such as pastrami, chorizos and flat pancetta. Just to name a few.

TASMANIAN ANGUS DRY AGED

The unique brand of beef we stock is called PURE BLACK BEEF

It is renowned as some of the most pure beef in Australia.

The common traits of this beef are lightly marbled, one hundred percent full flavoured pure grass fed beef.

We choose to use the brand pure black beef in our aging room because it is pure angus cattle used for this program.

The angus we select for the aging room holds different characteristics to the angus beef used in our fresh display, as we choose fresh cuts with approx. 15mm of fat coverage over the primal.

We then move on to placing them in our controlled environment in the aging room where the real magic starts to happen.

In 21 to 30 days the beef gets pulled from the dry age  room ready for all our customers to enjoy the full flavoured beef that is commonly known as dry aged beef.
